Alginates
There are alginates linked to different salts, such as sodium-, potassium-, ammonium-, and calcium alginates. Each and one of them with different characteristics.
The raw material is brown algae, from which alginic acid is extracted. From alginic acid different kinds of alginates can be produced.
Is used as a thickener and a gelling agent, in all kinds of food, with no quantity restrictions.
