Citric acid
Citric acid is either monohydrate (i.e. with about 8 % water) or anhydrous (i.e. free from water). Both qualities are available in powder, or crystallized powder to coarse crystals.
citric acid occurs naturally in many foodstuff. Is produced through fermentation of molasses or glucose, using special fungi.
Citric acid is used in all kinds of food, to adjust the pH-value, as antioxidants, to add flavour etc.
