Fructose
Fructose is the sweetest of all natural sugars. The relative sweetness compared to common sugar, is for crystallized about 1,5. Fructose is available in crystal form as well as liquid.
Fructose is a sugar which occurs freely in many plants, mostly in fruits but also in vegetables. Fructose is today mainly produced by enzymatic conversion of glucose.
Is used as an alternative or complement to sugar. It functions at its best in cold products, such as jam / beverages, as the sweetness decreases at higher temperatures.
