Honey
All honey is, when fresh, freeflowing and amber coloured. In crystalline form it becomes more or less solid, and the colour varies from white, via yellow nuances to brown. If the content of fructose is high, at the expense of the dextrose content, the honey stays flowing and does not crystallize. The composition of the honey; colour, taste, flavour/aroma, is depending on where the bees have collected the raw material.
Honey is, somewhat simplified, the raw material which honeybees produce from pollen and nectar.
Is used as a sweetener and to provide taste / flavour.
