Liquorice

Liquorice is available in different colours; from light brown to dark colour. It is also supplied with different strength; the content of glycyrrhizin is decisive. Liquorice is supplied in powder, block or as a paste.

Liquorice is extracted from the liquorice root, which grows in southern Europe, Iran, Irak, China, and other countries. The most important part of the root is glucoside; glycyrrhizin. You extract the root with water and the product is then further refined in several steps.

Is used to give flavour, mainly in confectionery products, but also for instance in ice-cream.
