Malic acid
Malic acid is a softer acid than citric acid. The complete taste experience however gives a larger sourness; which makes it work well with aspartame/acesulfame-K, in beverages. Malic acid is an anhydrous acid, available in powder as well as in granulated form.
Malic acid is a commonly found acid in nature. Besides in apples, it is to a great extent, found in melons, plums, cherries, bananas, etc. Malic acid is today synthetically produced, on the basis of butane gas.
Malic acid can be used in all kinds of food. Large areas are various light-beverages (diet-beverages), confectionery products etc.
