Milk protein
Milk protein is available in powder form.
Milk protein (sodium caseinate) is produced by letting acid precipitated casein (80 % of the protein source in milk) react with sodium hydroxide. The product is then drumdried or spraydried.
Milk protein is used in processed meat, to emulsify fat. In lowfat yogurt, milk protein is used mainly to provide viscosity. Milk protein is also used in margarine and ice-cream.
