Modified starches
Modified starches can be produced from various types of native starches; maize, waxymaize, tapioca, potatoe, wheat, and rice. The modification is chemical and adds new atomic groups, or as an alternative changes the starch molecule in other ways. Chemically modified starches are additives and they have all E-numbers. They are characterized by having improved qualities as regards viscosity, stability, freezing resistance, transparency, and pH-stability.
