Potassium sorbate is supplied in powder form as well as in granulated form. Functions at its best in acid products, with a pH-value below 5. Potassium sorbate is effective against yeast, mould, and many other bacteria; however with the exception of lactic acid bacteria.
Potassium sorbate is the salt of sorbic acid (E 200), which exists naturally in many berries, as for instance in rowan berries. Sorbic acid is produced through a synthesis of croton aldehyde and keten.
Potassium sorbate is together with sodium bensoate (E 211) one of the most common preservatives in food. When it comes to adding and dosage, this is strictly regulated by food legislation. Potassium sorbate is - unlike sorbic acid - water soluble.
