Sorbic acid

Sorbic acid is available in granulated form. Functions best in sour products, at a pH-value below 5. Sorbic acid is effective against yeast, mould, and many bacteria, however with the exception of lactic acid bacteria.

Sorbic acid exists naturally in many berries, for instance rowan berries. Sorbic acid is produced through a synthesis of croton aldehyd and keten.

Sorbic acid is allowed in most food products, is mainly used in bakery products, cakes and pastries.
