White to yellow-white powder. Soluble in cold water. Creates solutions of high viscosity, with very evident pseudoplastic characteristics.
Biopolymer produced through fermentation of a carbohydrate (for instance sugar), with the help of the microorganism Xantomonas Campestris.
Sauces, dressings, beverages, mayonnaise, bakery products. Good thickener and stabilizer in systems where particles are to be suspended in a water solution.
